Ingredients:1 gallon apple cider
2 cinnamon sticks
4 cardamom pods
1 1/2 cups Calvados
Lemon, orange slices and cinnamon sticks for garnish
Put cider in a heavy bottomed pot. Make a bouquet with the cinnamon sticks, cloves and cardamon by wrapping them in cheesecloth, bringing together the ends and and tying the bouquet in kitchen twine. Add to the cider. Simmer the cider for 45 or up to 3 hours. Periodically stir and and skim foam that rises to the surface. Stir in Calvados when ready to serve. Serve the cider in heated mugs garnished with a slice of lemon, orange or cinnamon.
