Holiday Wassail

Ingredients:

2 thinly sliced lemons 12 beaten eggs, beaten
4 whole cloves
1 tsp. grated nutmeg
2 cinnamon sticks
3/4 lbs light brown sugar
1 bottle medium dry Sherry
2 lbs. cooking apples
5 12 oz. bottles Ale
5 12 oz. bottles stout or porter

Directions:

Preheat oven to 375°F. Core the apples and pare a 1-inch strip of skin from around the middle of each apple. Put apples in a glass buttered baking dish. Place 1 tablespoon of brown sugar in center of each apple. Bake uncovered 30-40 minutes. Heat the ale in a pot with the sugar, cinnamon sticks for 15 minutes. Be careful to never boil the ale. but don't boil, the ale. Add sherry, nutmeg, ginger, lemon slices and cloves and heat five more minutes. Remove from heat, add beaten eggs while mixing well. Strail out cloves, lemon slices and cinnamon sticks. Serve the Wassail from the pot and present it in a punch bowl after allowing it to cool slightly. Add the baked apples. Enjoy.
